Air Fryer Zinger Scotch Egg
This recipe transforms the classic Scotch egg with a fiery 'Zinger' crust made from crushed tortilla chips and spices. Hard-boiled eggs are wrapped in reduced-fat pork sausage meat, coated in the crunchy mixture, and then air fried until golden. The result is a satisfying snack or lunch option with a spicy kick and a crisp texture, perfect for enjoying warm or cold. It offers a lighter take on a traditional favourite.
Ingredients
- 4 medium eggs, (at room temperature)
- 8 reduced-fat pork sausages
- 2 tsp cornflour
- 1 medium egg, (beaten)
- 80 g Doritos Chilli Heatwave flavour tortilla chips
- 2 tsp mild chilli powder
- 2 tsp garlic granules
- 2 tsp paprika
- 2 tsp onion granules
- low-calorie cooking spray
Method
- Fill a medium saucepan halfway with cold water and bring it to a boil. Carefully add the room temperature eggs to the boiling water with a large spoon. Lower the heat to maintain a simmer and cook the eggs for 8-10 minutes to hard boil them.
- Transfer the cooked eggs from the pan with a slotted spoon into a medium bowl of cold water. Refresh the cold water a few times until the eggs are fully cooled to halt the cooking process and avoid discolouration.
- Once the eggs are cold, drain the water and peel off the shells carefully, ensuring no shell remains. Let the peeled eggs dry while you prepare the coating.
- Put the Doritos chips, chilli powder, garlic granules, paprika, and onion granules into a sturdy food bag. Remove the air, seal the bag, and crush the contents with a rolling pin until you have coarse crumbs. Tip this mixture onto a plate and set it aside.
- Remove the sausage meat from its casings and place it in a medium mixing bowl. Knead it into a ball, then separate it into four equal parts.
- Coat the dried hard-boiled eggs entirely with cornflour. Take one portion of sausage meat and shape it around an egg until it is fully covered. Do this for all four eggs.
- Roll each sausage-wrapped egg in the beaten egg until fully covered. Then coat them thoroughly in the prepared Zinger crumb mixture.
- Heat your air fryer for 2-3 minutes at 180°C. Lightly spray the air fryer basket with low-calorie cooking spray. Arrange the coated Scotch eggs in the basket and spray their tops. Cook for 20 minutes, turning them over halfway and spraying again. They are done when the sausage is cooked through with no pink colour and the coating is crisp and golden.
- Take the eggs out of the air fryer using a large metal spoon. Slice each egg in half with a large serrated knife, like a bread knife, and serve either warm or chilled.
