Ingredients

  • 1 cup graham cracker crumbs
  • 3/4 cup sugar
  • 1/4 cup butter, melted
  • 1 1/2 cups sour cream
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 lb cream cheese, broken into small pieces
  • 2 tablespoons butter, melted

Method

  1. Combine the graham cracker crumbs with 1/4 cup sugar and 1/4 cup melted butter, then press the mixture into the base of an 8- or 9-inch ungreased springform pan.
  2. In a food blender, mix the sour cream, 1/2 cup sugar, eggs and vanilla for 1 minute.
  3. Add the pieces of cream cheese to the blender and process the mixture until it is completely smooth.
  4. With the machine running, pour 2 tbsp melted butter through the feed opening. Transfer the finished filling into the prepared springform pan.
  5. Place the pan in the lower third of an oven preheated to 325 degrees and bake for 45 minutes.
  6. Once baked, take the cheesecake from the oven. Switch the oven to the broil setting and broil the cake just until the surface develops appealing brown spots.
  7. Chill the cheesecake in the refrigerator for 4 hours, or ideally overnight, prior to slicing and serving. It is a very rich dessert, so cut small pieces. It serves 8-12.
