This recipe yields individual cheesecakes with an Oreo cookie base. A smooth cream cheese, sugar, and egg mixture is poured over the cookies before baking. Ingredients
- 12 Oreo cookies, tops separated from bottoms
- 2 (8 ounce) packages cream cheese
- 1/2 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1/2 cup chocolate chips
- 2 teaspoons shortening
Method
- Combine the cream cheese, sugar, vanilla and eggs in a bowl, beating them together until you have a smooth mixture. Place one Oreo cookie with its frosting side facing up into each lined muffin cup.
- Spoon the cream cheese mixture over the top of each cookie.
- Sprinkle the crushed Oreo cookie tops over the cream cheese layer.
- Bake the cheesecakes at 325° for 25 minutes.
- Take the cheesecakes from the oven and allow them to cool completely.
- Melt the chocolate chips with the shortening together until the mixture is smooth.
- Drizzle the melted chocolate mixture over the tops of the cooled cheesecakes.
