These Australian friands are wonderfully light cakes, flavoured with lemon zest and studded with fresh blueberries. The recipe uses ground almonds and egg whites for a delicate texture. They are quick to prepare, taking about 40 minutes from start to finish, and make a lovely treat for brunch or afternoon tea. You will need a friand or muffin tin to bake them.

Blueberry & Lemon Friands

Ingredients

  • 100g unsalted butter melted and cooled
  • 125g icing sugar plus extra for dusting
  • 25g plain flour
  • 85g ground almond
  • 3medium egg whites
  • 1 unwaxed lemon grated rind only
  • 85g blueberry

Method

  1. Set your oven to fan 180C/conventional 200C/gas 6. Butter six non-stick friand or muffin tins generously. Melt the butter and allow it to cool.
  2. Place the icing sugar and plain flour into a bowl and sift them together. Stir in the ground almonds, mixing the ingredients with your fingers.
  3. In a separate bowl, whisk the egg whites until they become a light, foamy mixture. Create a hollow in the dry ingredients, pour in the egg whites and grated lemon rind, then gently fold in the cooled butter to make a soft batter.
  4. Spoon the batter evenly into the prepared tins. Scatter a handful of blueberries over the top of each cake. Bake for 15-20 minutes until golden and just firm when touched.
  5. Let the friands cool in their tins for 5 minutes before transferring them to a wire rack. Lightly dust with extra icing sugar just before serving.
