Ingredients

  • 2 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 0.5 cup sliced fresh mushrooms
  • 0.25 cup diced green bell pepper
  • 1 clove garlic, crushed
  • 12 medium shrimp, peeled and deveined
  • 5 large eggs
  • 0.5 cup milk
  • 1 teaspoon curry powder
  • salt and ground black pepper to taste
  • 4 ounces shredded Cheddar cheese
  • 1 medium tomato, sliced

Method

  1. Warm 1 tablespoon of oil in a medium nonstick pan. Sauté the diced onion, sliced mushrooms, and diced bell pepper until softened, about 5 minutes. Stir in the crushed garlic and cook for about 1 minute. Add the shrimp and cook until they turn opaque, 2 to 3 minutes per side. Move this mixture to a bowl and clean the pan.
