5-Ingredient Pumpkin Blender Bread
This straightforward loaf requires minimal effort, using a blender to combine the ingredients into a smooth batter. With canned pumpkin, oats, and maple syrup, it bakes into a moist, satisfying bread. Simply top with seeds and oats before baking for a finished look. Ingredients
- 1 1/4 cups canned pumpkin puree
- 2 cups oats
- 2 eggs
- 1/3 cup maple syrup
- 2 teaspoons baking powder
- pumpkin seeds, and oats for topping
Method
- Heat your oven to 350°F.
- Prepare an 8x4” loaf tin by lining it with foil and coating it with cooking spray, then set it aside.
- Place all the listed ingredients, excluding the toppings, into a blender and process until you have a smooth mixture.
- Transfer the blended batter into the prepared loaf tin.
- Scatter pumpkin seeds and a few extra oats over the surface of the batter.
- Place in the oven to bake for 25 minutes, checking it is done by inserting a toothpick which should come out clean.
- Let the baked loaf cool down fully before slicing. Keep any leftovers in an airtight container in the refrigerator where they will stay fresh for 4-5 days.
