Ingredients

  • 1 1/4 cups canned pumpkin puree
  • 2 cups oats
  • 2 eggs
  • 1/3 cup maple syrup
  • 2 teaspoons baking powder
  • pumpkin seeds, and oats for topping

Method

  1. Heat your oven to 350°F.
  2. Prepare an 8x4” loaf tin by lining it with foil and coating it with cooking spray, then set it aside.
  3. Place all the listed ingredients, excluding the toppings, into a blender and process until you have a smooth mixture.
  4. Transfer the blended batter into the prepared loaf tin.
  5. Scatter pumpkin seeds and a few extra oats over the surface of the batter.
