Chicken Bacon Pumpkin Gnocchi

Ingredients

  • 2 (16 ounce) packages gnocchi (total two pounds)
  • 8 slices bacon, diced
  • 2 boneless skinless chicken breasts, diced
  • 8 ounces silky tofu, cut into cubes
  • 1 cup unsweetened pumpkin puree
  • 1/2 cup parmesan cheese
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon dried chipotle powder
  • 1/2 teaspoon garlic powder
  • 1 cup nonfat yogurt
  • kosher salt and pepper, to taste
  • 3 green onions, sliced

Method

  1. Place a large pot of water on the heat and bring it to a boil.
  2. Cook the gnocchi as directed on the packet, then drain it.
  3. Drizzle a little olive oil over the drained gnocchi to prevent sticking and set it aside.
  4. In a large skillet, fry the diced bacon until it becomes crisp.
  5. Transfer the cooked bacon to a plate lined with paper towels to drain.
  6. Season the diced chicken with salt and pepper and cook it in the same pan until fully cooked.
  7. Remove the chicken from the skillet and set it aside with the bacon.
  8. Turn the heat down to low and drain any excess fat from the pan, leaving about a tablespoon.
  9. Add the cubed tofu to the pan and mash it gently until it reaches a creamy consistency.
  10. Stir in the pumpkin puree, Parmesan cheese, smoked paprika, chipotle powder and garlic powder.
  11. Return the cooked gnocchi, chicken and bacon to the skillet with the sauce.
  12. Stir everything together and let it cook for 5 minutes to heat through.
  13. Incorporate the yogurt, stirring until the dish is just warmed.
  14. Taste and adjust the seasoning with more salt and pepper if desired.
  15. Garnish the finished dish with sliced green onions before serving.
