Chicken Bacon Pumpkin Gnocchi

Ingredients
- 2 (16 ounce) packages gnocchi (total two pounds)
- 8 slices bacon, diced
- 2 boneless skinless chicken breasts, diced
- 8 ounces silky tofu, cut into cubes
- 1 cup unsweetened pumpkin puree
- 1/2 cup parmesan cheese
- 2 teaspoons smoked paprika
- 1/2 teaspoon dried chipotle powder
- 1/2 teaspoon garlic powder
- 1 cup nonfat yogurt
- kosher salt and pepper, to taste
- 3 green onions, sliced
Method
- Place a large pot of water on the heat and bring it to a boil.
- Cook the gnocchi as directed on the packet, then drain it.
- Drizzle a little olive oil over the drained gnocchi to prevent sticking and set it aside.
- In a large skillet, fry the diced bacon until it becomes crisp.
- Transfer the cooked bacon to a plate lined with paper towels to drain.
- Season the diced chicken with salt and pepper and cook it in the same pan until fully cooked.
- Remove the chicken from the skillet and set it aside with the bacon.
- Turn the heat down to low and drain any excess fat from the pan, leaving about a tablespoon.
- Add the cubed tofu to the pan and mash it gently until it reaches a creamy consistency.
- Stir in the pumpkin puree, Parmesan cheese, smoked paprika, chipotle powder and garlic powder.
- Return the cooked gnocchi, chicken and bacon to the skillet with the sauce.
- Stir everything together and let it cook for 5 minutes to heat through.
- Incorporate the yogurt, stirring until the dish is just warmed.
- Taste and adjust the seasoning with more salt and pepper if desired.
- Garnish the finished dish with sliced green onions before serving.
