4th of July Pie

Ingredients

  • 6 egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1 1/2 cups sugar
  • 1 1/2 cups whipping cream
  • 12 ounces cream cheese
  • 1 1/2 cups sugar
  • 1 (21 ounce) can cherry pie filling
  • 1 (6 ounce) container blueberries
  • 1 (6 ounce) container raspberries or 1 cup sliced strawberry

Method

  1. Begin by preparing the crust. In a bowl, whip the egg whites with the salt until they become foamy.
  2. Incorporate the cream of tartar and continue beating the mixture until it turns fluffy.
  3. Gradually add the sugar while beating, continuing until the meringue appears glossy and firm.
  4. Transfer the meringue to a 9x13 inch pan, spreading it evenly across the bottom and up the sides.
  5. Place the pan in an oven preheated to 275°F and bake for one hour.
  6. After baking, turn the oven off but leave the crust inside to cool completely overnight. Do not open the oven door during this time.
  7. For the filling, combine the whipping cream, cream cheese, and sugar in a separate bowl.
  8. Whip these ingredients together using a high speed setting until the mixture is smooth and thick.
  9. Once the meringue crust has cooled, spread the cream cheese filling evenly over its base.
  10. Refrigerate the assembled pie for a minimum of 2 hours to allow the filling to chill and set.
  11. To make the topping, gently stir the raspberries and blueberries into the canned cherry pie filling.
  12. Finally, spread this berry mixture over the top of the chilled cream cheese layer before serving.
