4th of July Pie
This celebratory pie features a unique baked meringue crust that sets overnight. It is layered with a rich, sweetened cream cheese filling and crowned with a vibrant mix of cherry pie filling and fresh berries. The dessert requires chilling for at least 2 hours to set properly before serving. It yields 14 to 16 portions and takes approximately 150 minutes of active preparation and baking time.
Ingredients
- 6 egg whites
- 1/4 teaspoon salt
- 1 teaspoon cream of tartar
- 1 1/2 cups sugar
- 1 1/2 cups whipping cream
- 12 ounces cream cheese
- 1 1/2 cups sugar
- 1 (21 ounce) can cherry pie filling
- 1 (6 ounce) container blueberries
- 1 (6 ounce) container raspberries or 1 cup sliced strawberry
Method
- Begin by preparing the crust. In a bowl, whip the egg whites with the salt until they become foamy.
- Incorporate the cream of tartar and continue beating the mixture until it turns fluffy.
- Gradually add the sugar while beating, continuing until the meringue appears glossy and firm.
- Transfer the meringue to a 9x13 inch pan, spreading it evenly across the bottom and up the sides.
- Place the pan in an oven preheated to 275°F and bake for one hour.
- After baking, turn the oven off but leave the crust inside to cool completely overnight. Do not open the oven door during this time.
- For the filling, combine the whipping cream, cream cheese, and sugar in a separate bowl.
- Whip these ingredients together using a high speed setting until the mixture is smooth and thick.
- Once the meringue crust has cooled, spread the cream cheese filling evenly over its base.
- Refrigerate the assembled pie for a minimum of 2 hours to allow the filling to chill and set.
- To make the topping, gently stir the raspberries and blueberries into the canned cherry pie filling.
- Finally, spread this berry mixture over the top of the chilled cream cheese layer before serving.
