3-Ingredient Peach Pie Filling

Ingredients
- 12 cups fresh peaches (peeled and sliced, pits removed)
- 2 cups sugar
- 5 -6 tablespoons tapioca (dry)
Method
- Combine the sliced peaches with 1 1/2 cups of sugar in a large cooking pot.
- Bring the mixture to a boil before stirring in the remaining 1/2 cup of sugar and the dry tapioca.
- Allow the filling to return to a boil and cook for exactly 1 minute.
- Take the pot off the heat and let the contents cool completely.
- Separate the cooled filling into three equal portions, transferring each to a container suitable for freezing.
- One portion is the correct amount for a single pie.
- When ready to use, thaw the filling at room temperature. avoid using a microwave.
- Spoon the thawed filling into an unbaked pie shell, cover with a pastry crust, and bake following standard instructions for a fruit pie.
