3 Chocolate Cherry Bark
This indulgent candy features layers of semisweet, milk and white chocolate, each melted with butter. It is studded with dried cherries and pecans that have been roasted with a caramel coating of brown sugar, salt, cayenne, nutmeg and cinnamon. The mixture is spread thin to set before being broken into rustic pieces. The recipe yields approximately 4 pounds of bark, requiring about 150 minutes to prepare.
Ingredients
- 7 tablespoons butter
- 1/2 cup brown sugar
- 2 cups pecan pieces
- salt
- cayenne pepper
- 1 pinch ground nutmeg
- 1 pinch ground cinnamon
- 1 lb semisweet chocolate
- 1 lb milk chocolate
- 1 lb white chocolate
- 2 cups dried cherries
Method
- Heat your oven to 400 degrees F.
- Melt 4 tablespoons of butter in a large saute pan. Stir in the brown sugar until it dissolves and bubbles. Mix in the pecan pieces. Season them with salt, cayenne pepper, ground nutmeg and ground cinnamon. Cook while stirring constantly for roughly 4 minutes, until the sugar caramelises and coats the nuts. Take the pan off the heat and spread the pecans on a baking sheet lined with parchment. Roast them in the oven for about 6 minutes. Let the pecans cool fully, then break them into smaller bits.
- Half fill three small saucepans with water and set them over medium heat. Bring the water to a boil, then lower to a simmer. Place the semisweet chocolate, milk chocolate and white chocolate into three separate mixing bowls. Set each bowl over a saucepan. After approximately 2 minutes, the chocolate will begin to melt. Stir each one until completely smooth. Remove from the heat and blend 1 tablespoon of butter into every bowl of chocolate. Pour each chocolate type onto a marble slab or a large parchment lined baking sheet. Scatter the prepared pecans and dried cherries over the chocolates. Use a metal spatula to spread the mixture evenly to a thickness of about 1/4-inch. You can place it in the refrigerator or leave it out to set, which takes a couple of hours. Finally, break the set bark into medium sized pieces for serving.
