Dark Chocolate Sea Salt Almonds
Create a delightful homemade confection by coating whole almonds in melted dark chocolate. Each nut is individually dipped, then finished with a touch of coarse salt and raw sugar for a perfect sweet and salty balance. The chocolate sets to a crisp shell, making these an irresistible snack or edible gift. This recipe yields approximately 1 and 1/2 cups of finished candy.
Ingredients
- 6 ounces bittersweet or semi-sweet high quality chocolate
- 1 and 1/2 cups whole almonds (raw and unsalted)
- coarse sea salt or flaky sea salt
- turbinado sugar (or any coarse/raw sugar)
Method
- Prepare a large baking sheet by lining it with parchment paper or a silicone mat. Set this aside for later.
- Melt 6 ounces of chocolate using a double boiler or a microwave. For the microwave method, put the chocolate in a heatproof bowl and heat in 30 second intervals, stirring between each, until smooth. You may temper the chocolate instead. if you do, avoid refrigerating the finished almonds.
- Mix the 1 and 1/2 cups of almonds into the melted chocolate until fully coated. Using a fork or dipping tool, lift almonds out individually or in small groups. Gently tap the tool against the bowl to remove extra chocolate, then transfer each almond to the lined sheet.
- Lightly sprinkle the coated almonds with sea salt and turbinado sugar. Let the chocolate set completely. You can place the baking sheet in the refrigerator to speed up this process.
