Apple Blossoms (Chudleigh's Copycat)
This recipe recreates the beloved apple blossoms, featuring a spiced apple filling wrapped in a simple dough and topped with caramel and sugar. The method involves preparing the filling, making a quick caramel sauce, and assembling individual pastries before baking. It yields eight servings and takes about 60 minutes from start to finish. These treats are perfect for making ahead, as they freeze very well for future enjoyment.
Ingredients
- 4 apples, peeled, cored, and cubed small (northern spy or Granny Smith)
- 1 teaspoon lemon juice
- 1/2 teaspoon cornstarch
- 1/4 teaspoon cinnamon
- 4 tablespoons butter
- 1 cup brown sugar
- 1 1/2 cups self-rising flour
- 4 tablespoons vegetable oil
- water, to mix
- 1 egg, mixed with
- 1 tablespoon water (to make an egg wash)
- 8 teaspoons rolled oats
- 8 teaspoons coarse sugar (or sugar in the raw)
Method
- Set your oven to 400° and prepare a baking sheet with parchment paper or a silpat.
- Combine all the filling ingredients in a small bowl and set this mixture aside.
- For the caramel, cook the butter and brown sugar together, bringing it to a boil while stirring. Let it boil for about 2 minutes, then take it off the heat and allow it to cool completely, stirring now and then.
- Make the dough by mixing the self-rising flour with vegetable oil. Add just enough cold water to form a firm dough that is not sticky. Separate the dough into eight equal portions and roll each one into a disc roughly 5-6 inches across.
- To assemble, spoon one-eighth of the apple filling onto the middle of each dough circle. Bring the edges of the dough up and around the filling to create a cup shape. You can use a jumbo muffin tin for support. Lightly brush the dough with the prepared egg wash.
- Onto each assembled blossom, sprinkle one teaspoon of rolled oats. Then, drizzle some of the cooled caramel over the apple filling. Finish with a light scattering of coarse sugar over the entire top.
- Bake the blossoms at 400F for 25-30 minutes until they are thoroughly heated. Transfer them to a wire rack to cool down.
