2 Layer Cheese Cake
This cherished family cheesecake features two distinct layers. A light, fluffy sponge cake is baked with cream cheese, then layered with a rich, cooked filling made from butter, cornflour, and condensed milk. The assembled cake is finished with a sprinkle of grated cheddar cheese and requires chilling before it is ready to serve. The entire process takes about 65 minutes to complete.
Ingredients
- 200 g all-purpose flour
- 50 g cornflour (cornstarch)
- 250 g caster sugar
- 6 large eggs
- 125 g butter, melted
- 80 g cream cheese, softened (I used philadelphia Cream Cheese)
- 60 ml fresh milk
- 1 tablespoon cake stabilizer (Ovalette)
- 1 teaspoon baking powder
- grated cheddar cheese, for topping
- 60 g butter
- 60 g cornflour (cornstarch)
- 60 g sweetened condensed milk
- 70 ml fresh milk
Method
- Begin by making the cake batter. Use a mixer on its highest setting to beat the eggs, sugar, all-purpose flour, cornflour, baking powder, cake stabilizer, and fresh milk for 8 minutes until the mixture is white and fluffy.
- Gently fold the melted butter into the batter using a wooden spoon until fully combined. Next, stir in the softened cream cheese, mixing slowly once more.
- Prepare two 9 x 9 inch baking pans by greasing them with melted butter and lining with greaseproof paper. Divide the batter equally between the two pans.
- Bake the cakes in a preheated oven at 160 degrees Celcius for 35 minutes. They are done when a toothpick inserted into the centre comes out clean. Let the cakes rest in their pans for 5 minutes before transferring them to a wire rack to cool completely.
- To prepare the filling, combine the butter, cornflour, sweetened condensed milk, and fresh milk in a pan. Melt the ingredients together, stirring continuously until the mixture is smooth and sticky, which should take about 25 minutes.
- Place one cooled cake layer on a serving plate. Spread a portion of the warm filling over it. Top with the second cake layer. Cover the top of this second layer with the remaining filling, then sprinkle generously with grated cheddar cheese. Chill the assembled cake before slicing and serving.
