1970's French Strawberry Pie
This nostalgic French strawberry pie recipe from the 1970s features a ready-made shortbread crust for ease. A layer of softened cream cheese is topped with fresh quartered strawberries. Ingredients
- 4 cups strawberries, quartered into pieces
- 4 ounces cream cheese, softened
- 8 ounces whipping cream
- 1 cup sugar
- 4 tablespoons cornstarch
- 1 ready shortbread crust, Keebler brand
Method
- Use a little cream to help spread the softened cream cheese across the base of the pie shell.
- Arrange the quartered strawberry pieces over the layer of cream cheese.
- Take the remaining fresh strawberries and place them in a saucepan, mashing them down.
- Stir the sugar and cornstarch into the mashed strawberries in the pan.
- Cook the mixture for 10 minutes until it becomes very thick.
- Allow the cooked strawberry mixture to cool down completely.
- Pour the cooled strawberry glaze over the assembled pie.
- Place the pie in the refrigerator to chill for 2 hours.
- Whip the whipping cream, optionally adding a few tablespoons of sugar and some vanilla for flavour.
- Spread the whipped cream over the top of the chilled pie.
