Ingredients

  • 4 cups strawberries, quartered into pieces
  • 4 ounces cream cheese, softened
  • 8 ounces whipping cream
  • 1 cup sugar
  • 4 tablespoons cornstarch
  • 1 ready shortbread crust, Keebler brand

Method

  1. Use a little cream to help spread the softened cream cheese across the base of the pie shell.
  2. Arrange the quartered strawberry pieces over the layer of cream cheese.
  3. Take the remaining fresh strawberries and place them in a saucepan, mashing them down.
  4. Stir the sugar and cornstarch into the mashed strawberries in the pan.
  5. Cook the mixture for 10 minutes until it becomes very thick.
  6. Allow the cooked strawberry mixture to cool down completely.
  7. Pour the cooled strawberry glaze over the assembled pie.
  8. Place the pie in the refrigerator to chill for 2 hours.
  9. Whip the whipping cream, optionally adding a few tablespoons of sugar and some vanilla for flavour.
  10. Spread the whipped cream over the top of the chilled pie.
