10-Minute Lime Cracker Pie
This no-bake pie features layers of tangy lime custard and buttery crackers, creating a unique dessert texture. The filling, made from condensed milk, cream, and fresh lime, thickens upon mixing. Assembled in a deep dish, it must chill overnight to allow the crackers to fully absorb the creamy layers. The result is a refreshing and surprisingly simple pie perfect for a crowd.
Ingredients
- 2 (14 ounce) cans sweetened condensed milk, I used Eagle low-fat
- 1 pint heavy cream
- 1/2 cup lime juice, use fresh limes
- 1 tablespoon grated lime zest
- 10 ounces Ritz crackers, I used low salt, about 2 1/2 sleeves
Method
- In a large bowl, mix the sweetened condensed milk with the heavy cream.
- Pour in the lime juice and whisk the mixture for about 1 minute until it thickens.
- Place roughly 1 cup of the prepared filling into the base of a deep dish pie plate or an 11 inch oval casserole.
- Arrange a single layer of Ritz crackers over the filling.
- Continue building layers, alternating between the filling and crackers until the dish is full, ending with a final layer of the lime mixture.
- Scatter the grated lime zest evenly over the top.
- Cover the dish loosely with plastic wrap and place it in the refrigerator overnight.
