  • 10 ounces Ritz crackers, I used low salt, about 2 1/2 sleeves

Method

  1. In a large bowl, mix the sweetened condensed milk with the heavy cream.
  2. Pour in the lime juice and whisk the mixture for about 1 minute until it thickens.
  3. Place roughly 1 cup of the prepared filling into the base of a deep dish pie plate or an 11 inch oval casserole.
  4. Arrange a single layer of Ritz crackers over the filling.
  5. Continue building layers, alternating between the filling and crackers until the dish is full, ending with a final layer of the lime mixture.
  6. Scatter the grated lime zest evenly over the top.
