Ingredients

  • 1 cup milk
  • 1 cup white sugar
  • 6 ounces butter
  • 3 tablespoons golden syrup
  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground allspice
  • 1 teaspoon baking soda

Method

  1. Set your oven to 350 degrees F (175 degrees C). Prepare an 8x4-inch loaf pan by greasing and flouring it.
  2. Place the milk, sugar, butter and golden syrup into a small saucepan. Bring this mixture to a boil, then take it off the heat and leave it to one side.
  3. Sift the all-purpose flour, ground ginger, allspice and baking soda into a large mixing bowl. Pour in the milk mixture and stir until the ingredients are just combined. Transfer this batter into your prepared loaf pan.
  4. Put the pan into your preheated oven and immediately lower the temperature to 325 degrees F (160 degrees C). Bake the gingerbread for about 1 hour, until the top feels springy when you press it lightly.
