Ye Ole Gingerbread
This reliable recipe produces a wonderfully moist gingerbread loaf, a traditional German breakfast. The batter, made with golden syrup and aromatic spices, bakes into a fragrant cake with a tender crumb. It is perfect for slicing and enjoying with a cup of tea or coffee. The method involves gently heating the wet ingredients before combining them with the dry mixture for a simple, fuss-free bake.
Ingredients
- 1 cup milk
- 1 cup white sugar
- 6 ounces butter
- 3 tablespoons golden syrup
- 2 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 teaspoon ground allspice
- 1 teaspoon baking soda
Method
- Set your oven to 350 degrees F (175 degrees C). Prepare an 8x4-inch loaf pan by greasing and flouring it.
- Place the milk, sugar, butter and golden syrup into a small saucepan. Bring this mixture to a boil, then take it off the heat and leave it to one side.
- Sift the all-purpose flour, ground ginger, allspice and baking soda into a large mixing bowl. Pour in the milk mixture and stir until the ingredients are just combined. Transfer this batter into your prepared loaf pan.
- Put the pan into your preheated oven and immediately lower the temperature to 325 degrees F (160 degrees C). Bake the gingerbread for about 1 hour, until the top feels springy when you press it lightly.
