Wonton Soup
This classic soup is a cherished family recipe. Preparing the pork and shrimp filled wontons requires a little effort, but the delicious result is entirely worthwhile. The dumplings are simmered in a simple, clear chicken broth for a light yet satisfying dish. It's perfect for a comforting meal any time of the year.
Ingredients
- 1/2 lb ground pork
- 2 ounces peeled shrimp, finely chopped
- 1 teaspoon brown sugar
- 1 tablespoon soy sauce
- 1 teaspoon chopped green onion
- 24 wonton wrappers
- 3 cups chicken stock
Method
- Combine the ground pork, chopped shrimp, brown sugar, soy sauce, and green onion in a large mixing bowl.
- Mix the ingredients thoroughly and allow the mixture to rest for 25 to 30 minutes.
- Spoon approximately 1 tsp of the filling onto the middle of a wonton wrapper.
- Dampen all four edges of the wrapper with water, then fold the top corner down to meet the bottom, creating a triangle shape over the filling.
- Firmly press the edges together to seal the dumpling.
- Bring the left and right corners of the triangle together above the filling.
- Overlap these points, moisten them with water, and press to secure them. For the soup, bring the chicken stock to a rolling boil.
- Gently add the wontons to the boiling stock and cook them for 5 minutes.
- Serve the soup garnished with scallions.
- If cooking from frozen, allow an additional 2 minutes of cooking time.
- To fry the wontons, heat 2 to 3 cups of oil in a wok until hot.
- Deep fry the wontons in batches until they turn golden, for 2 to 3 minutes on each side.
- Drain the fried wontons on paper towels and serve them with a plum dipping sauce.
