Wilted Garlic Spinach
This straightforward side dish was inspired by an Italian cooking demonstration. It uses fresh spinach cooked with garlic and a hint of nutmeg. You can also prepare it with frozen spinach, provided you remove any extra liquid first. It makes a great accompaniment to dishes like roasted chicken and is ready in about 20 minutes.
Ingredients
- 1 kg fresh spinach, washed and trimmed
- 4 tablespoons olive oil
- 4 -6 cloves garlic, more or less to your garlic preference
- 1/4 teaspoon nutmeg
- salt
- pepper
Method
- Warm the olive oil in a frying pan.
- Introduce the garlic to the pan, either chopped or smashed.
- Allow the garlic to cook for about 3 minutes.
- Put the spinach in the pan and use tongs to turn it continuously until it wilts.
- Season the spinach with nutmeg, salt and pepper.
- Serve immediately.
