Wilted Garlic Spinach

This straightforward side dish was inspired by an Italian cooking demonstration. It uses fresh spinach cooked with garlic and a hint of nutmeg. You can also prepare it with frozen spinach, provided you remove any extra liquid first. It makes a great accompaniment to dishes like roasted chicken and is ready in about 20 minutes.

Wilted Garlic Spinach

Ingredients

  • 1 kg fresh spinach, washed and trimmed
  • 4 tablespoons olive oil
  • 4 -6 cloves garlic, more or less to your garlic preference
  • 1/4 teaspoon nutmeg
  • salt
  • pepper

Method

  1. Warm the olive oil in a frying pan.
  2. Introduce the garlic to the pan, either chopped or smashed.
  3. Allow the garlic to cook for about 3 minutes.
  4. Put the spinach in the pan and use tongs to turn it continuously until it wilts.
  5. Season the spinach with nutmeg, salt and pepper.
  6. Serve immediately.
