White Chocolate Chip Muffins
These delightful muffins combine a rich cocoa batter with sweet white chocolate chips for a decadent result. The recipe uses buttermilk and melted butter to create a wonderfully moist and tender crumb. Ready in just 35 minutes, they are ideal for baking fresh and serving warm. Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup brown sugar, packed
- 1/3 cup baking cocoa
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 1/3 cups buttermilk
- 1/3 cup butter, melted
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups vanilla or 1 1/2 cups white chocolate chips
Method
- Mix the flour, packed brown sugar, cocoa, baking soda and salt together in a large bowl.
- In a separate bowl, whisk together the eggs, buttermilk, melted butter and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Carefully fold the vanilla or white chocolate chips into the batter.
- Spoon the batter into greased or paper-lined muffin cups, filling each about three-fourths full.
- Bake at 400° for 14-18 minutes or until a toothpick inserted near the centre comes out clean.
- Allow the muffins to cool in the pans for 5 minutes before transferring them to a wire rack.
- Serve the muffins while they are still warm.
