These delightful muffins combine a rich cocoa batter with sweet white chocolate chips for a decadent result. White Chocolate Chip Muffins

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1/3 cup baking cocoa
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/3 cups buttermilk
  • 1/3 cup butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups vanilla or 1 1/2 cups white chocolate chips

Method

  1. Mix the flour, packed brown sugar, cocoa, baking soda and salt together in a large bowl.
  2. In a separate bowl, whisk together the eggs, buttermilk, melted butter and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Carefully fold the vanilla or white chocolate chips into the batter.
  5. Spoon the batter into greased or paper-lined muffin cups, filling each about three-fourths full.
  6. Bake at 400° for 14-18 minutes or until a toothpick inserted near the centre comes out clean.
  7. Allow the muffins to cool in the pans for 5 minutes before transferring them to a wire rack.
  8. Serve the muffins while they are still warm.
