White Bean, Parsley and Garlic Mash

This simple French mash uses canned cannellini beans for a fast and flavourful side. Shallots and garlic are softened before the beans are added and roughly mashed with a little stock. Finished with fresh flat-leaf parsley, it's a versatile accompaniment ready in just 15 minutes.

White Bean, Parsley and Garlic Mash

Ingredients

  • 2 tbsp olive oil
  • 1 shallot or 1⁄2 a small onion, finely chopped
  • 2 garlic cloves chopped
  • 2 x 400g cans cannellini beans drained
  • 50ml stock or water
  • large handful flat-leaf parsley

Method

  1. Warm the olive oil in a saucepan and add the finely chopped shallot or onion. Cook for 5 mins before adding the chopped garlic and cooking for a further 2 mins until softened.
  2. Add the drained cannellini beans to the pan and mash coarsely, loosening the mixture with a splash of stock or water. Mix through the flat-leaf parsley and season well. It pairs nicely with roasted white fish, spicy chorizo or griddled scallops.
