Watermelon Mint Salad

Ingredients
- 3 quarts watermelon, cubes
- 3/4 cup thinly sliced sweet onion
- 1/2 cup minced fresh mint leaves
- 3 tablespoons cider vinegar
- 1 dash salt
- 1 tablespoon chili powder
- 6 tablespoons olive oil
Method
- Combine the watermelon cubes, sliced sweet onion and minced mint leaves in a large bowl.
- Whisk together the cider vinegar, olive oil, chilli powder and a dash of salt in a separate small bowl or cup.
- Pour the prepared dressing over the watermelon mixture and gently toss everything to coat evenly.
- Place the salad in the refrigerator to chill for at least two hours before serving.
