Watermelon Mint Salad

Ingredients

  • 3 quarts watermelon, cubes
  • 3/4 cup thinly sliced sweet onion
  • 1/2 cup minced fresh mint leaves
  • 3 tablespoons cider vinegar
  • 1 dash salt
  • 1 tablespoon chili powder
  • 6 tablespoons olive oil

Method

  1. Combine the watermelon cubes, sliced sweet onion and minced mint leaves in a large bowl.
  2. Whisk together the cider vinegar, olive oil, chilli powder and a dash of salt in a separate small bowl or cup.
  3. Pour the prepared dressing over the watermelon mixture and gently toss everything to coat evenly.
  4. Place the salad in the refrigerator to chill for at least two hours before serving.
