Watermelon, Cucumber and Tomato Salad
This refreshing salad brings together sweet watermelon, crisp cucumber and juicy tomatoes for a vibrant side dish. Ingredients
- 2 cups watermelon, seeded and cubed (3/4 inch cubes)
- 4 plum tomatoes, ripe,cut into 8 pieces each
- 1 seedless cucumber, peeled,halved lengthwise and cut into 1/2 inch pieces (English)
- 2 tablespoons virgin olive oil
- 1/4 cup fresh basil leaf, chiffonade
- fresh ground pepper, to tast
Method
- Have all the ingredients prepared in advance and keep them stored separately.
- When ready to serve, drain any liquid from the watermelon, tomato and cucumber pieces using a colander, then transfer them to your serving bowl.
- Add the olive oil, basil and pepper to the bowl and gently toss everything together.
- Enjoy the salad straight away.
