Watercress and Chicken Stir-fry

Ingredients

  • 1 tbsp sunflower oil
  • 2 skinless and boneless chicken breasts cut into strips
  • 100g cashew nuts
  • 1 red or yellow pepper deseeded and chopped into large chunks
  • 1 red onion chopped into large chunks
  • 2 x 75g bags watercress
  • cooked rice, to serve (optional)
  • 3 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 1 large knob of fresh ginger peeled and finely grated
  • 2 garlic cloves crushed
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar or white wine vinegar

Method

  1. 1. Combine all the sauce ingredients in a small bowl, stirring until fully mixed. Place a frying pan over heat, add the oil and allow it to get very hot. 2. Add the chicken strips, cashew nuts, pepper and onion to the hot pan. Cook for about 4-5 mins, stirring constantly, until the chicken is cooked through and the nuts are golden. 3. Pour the prepared sauce into the pan, adding a splash of water, and let it simmer briefly. 4. Take the pan off the heat and gently mix the watercress through the stir-fry just before you serve it, optionally with boiled rice.
