Wash Day Cajun Lentils and Rice
This dish recalls a tradition from Acadian villages where a meat-free meal was enjoyed on wash days. It is a robust vegan stew combining spicy lentils, brown basmati rice and plenty of vegetables like carrots, peppers and mushrooms. All the ingredients are cooked together in a single pot with a tomato and vegetable broth base, seasoned with Cajun spices, thyme and lemon. The result is a comforting and flavourful one-pot meal perfect for a hearty dinner.
Ingredients
- 1/2 teaspoon olive oil
- 1 medium vidalia onions or 1 medium sweet onion, sliced thinly
- 1 large carrot, peeled and cut into coins
- 1 medium red peppers or 1 medium green pepper, chopped
- 2 cremini mushrooms, sliced
- 3 garlic cloves, peeled and chopped
- 1 1/2 cups diced tomatoes
- 2 cups low sodium vegetable broth
- 1 tablespoon cajun seasoning
- 1/2 teaspoon thyme
- 1/2 lemon, zest of
- 1/2 cup brown basmati rice
- 2/3 cup red lentil
- 1/2 lemon, juice of
Method
- Warm the olive oil in a large pot and cook the sliced onion and carrot coins.
- Continue cooking and stirring until the onion turns golden, which should take about 8 minutes.
- Mix in the chopped pepper and sliced mushrooms, then cook for another 7-8 minutes while stirring.
- Add the chopped garlic, diced tomatoes, vegetable broth, Cajun seasoning, thyme, lemon zest and brown basmati rice, stirring to combine.
- Lower the heat, partially cover the pot and leave to cook for 20 minutes without stirring.
- Take off the lid, stir in the red lentils and let the stew simmer for 25 minutes.
- Turn off the heat, mix through the lemon juice and then serve immediately.
