Warm Stuffed Avocados

This Spanish-inspired dish offers a fresh and flavourful alternative to a traditional salad. Ripe avocado halves are lightly grilled until warm, then filled with a colourful mixture of chopped tomatoes, black olives, spring onions and capers, all dressed in a citrus and herb vinaigrette. It's a quick and elegant starter, side dish or light meal, perfect for lunch or supper, ready in about 15 minutes.

Warm Stuffed Avocados

Ingredients

  • 2 large ripe avocados
  • 3 tbsp olive oil
  • 1 plum tomato deseeded and chopped
  • 4 sundried tomatoes in oil, drained and chopped
  • 50g pitted black olive quartered
  • 2 spring onions finely sliced on the diagonal
  • 1 tbsp capers
  • 1 tbsp each freshly squeezed orange lemon and lime juice
  • 1 tbsp cider vinegar
  • 2 tsp caster sugar
  • 2 large fresh torn basil leaves

Method

  1. Set your grill to hot. Cut the avocados in half and remove the stones. Use ½ tsp of the olive oil to brush each avocado half and place them on a baking tray. Grill for 5 mins.
  2. Combine all the leftover ingredients in a separate bowl. Add seasoning as desired, then spoon the mixture into the hollowed avocado halves. Serve straight away.
