Ingredients

  • 2 tablespoons sliced almonds
  • 1 (10 ounce) package spinach
  • 4 thinly sliced mushrooms
  • 1/2 teaspoon olive oil
  • 1 thinly sliced red onion
  • 1 teaspoon minced garlic
  • mandarin orange section
  • 1 tablespoon grainy mustard
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt

Method

  1. Toast the sliced almonds in a hot, nonstick frying pan for 30 seconds until browned.
  2. Combine the grainy mustard, 4 tablespoons olive oil, red wine vinegar, honey, chopped parsley, and 1/4 teaspoon salt in a bowl to make the dressing.
  3. Place the spinach on four plates and arrange the sliced mushrooms on top.
  4. Heat 1/2 teaspoon olive oil in a pan and cook the thinly sliced red onion with the minced garlic for 2 minutes.
  5. Pour the prepared dressing and the toasted almonds into the pan with the onions.
  6. Distribute the mandarin orange sections over the salads and spoon the hot dressing mixture on top.
  7. Enjoy the salad straight away, ideally with rolls on the side.
