Warm honey cup puddings
These individual Greek puddings are a delightful dessert, perfect for making ahead. Baked in buttered coffee cups or ramekins, they feature a light batter made with self-raising flour, ground almonds, and Greek yogurt. After baking until golden, they are turned out and drizzled with honey, then served warm with a scoop of pistachio ice cream and a sprinkling of chopped nuts. The recipe yields two servings and takes just 25 minutes from start to finish.
Ingredients
- 2 tbsp butter melted, plus extra for greasing the cups
- 2 tsp clear honey plus extra for drizzling
- 50g self-raising flour
- 25g ground almond
- 50g light muscovado sugar
- 1/4 tsp bicarbonate of soda
- 1 egg
- 85g Greek yogurt (take this from the 500g tub for the ice cream, below)
- 1 tbsp pistachios roughly chopped
Method
- Grease two large coffee cups or individual ramekins with butter, then place a circle of non-stick paper at the base of each. Pour 1 tsp of honey into the bottom of each prepared cup.
- Preheat the oven to 180C/fan160C/gas 4. In a large bowl, combine all the dry ingredients, using your fingers to break up any lumps in the sugar. In another bowl, whisk together the egg, melted butter, and yogurt. Stir the wet mixture into the dry ingredients until you have a smooth batter. Divide the batter between the cups, place them on a baking tray, and bake for 20 mins until golden and well-risen. Check they are done by inserting a skewer. it should come out clean. These puddings can be prepared a day in advance and reheated in a microwave or kept warm in the oven.
- Run a round-bladed knife around the inside edge of each pudding to loosen it. Invert the cups onto serving plates. Peel off the paper lining, then drizzle a little extra honey over each one. Serve immediately with a scoop of pistachio ice cream and a scattering of chopped pistachios.
