Waldorf Coleslaw
This Waldorf coleslaw combines a classic coleslaw mix with the traditional flavours of a Waldorf salad. A creamy dressing made with sour cream, apple cider vinegar and celery seed coats crisp apples, celery, raisins and walnuts. It is a quick side dish that takes only 15 minutes to prepare, though chilling for at least 2 hours or overnight allows the flavours to meld beautifully. Toss it just before serving for the best texture.
Ingredients
- 1 cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (16 ounce) package classic coleslaw mix, from produce dept
- 2 red apples, cored,chopped,about 3 cups
- 2 celery ribs, sliced,1 cup
- 1 cup golden raisin
- 1/2 cup chopped walnuts, toasted if desired
Method
- Mix the sour cream, apple cider vinegar, sugar, celery seed, salt and pepper together.
- Place the classic coleslaw mix, chopped red apples, sliced celery ribs, golden raisins and chopped walnuts in a large bowl. Pour the sour cream mixture over the top and toss everything to coat evenly.
- Place the bowl in the refrigerator for at least 2 hrs or leave it overnight.
- Give the coleslaw a final toss just before you are ready to serve it.
