This comforting casserole features cauliflower florets, diced potatoes, and peas, partially cooked then baked in a creamy, homemade sauce. Veggie Curry Casserole

Ingredients

  • 1 head cauliflower, broken into florets
  • 3 potatoes, peeled and diced
  • 2 garlic cloves
  • salt and ground black pepper to taste
  • 1 cup peas
  • 1 cup milk
  • 0.5 cup cold vegetable stock
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 slices Swiss cheese, torn into pieces
  • 1 tablespoon curry powder, or more to taste

Method

  1. Set your oven to 350 degrees F (175 degrees C) to preheat. Prepare a casserole dish by lightly greasing it.
  2. Place a pot of lightly salted water on to boil. Add the cauliflower florets, diced potatoes, and garlic cloves, cooking them for 5 to 7 minutes. Drain the vegetables and spread them in the greased dish. Season with salt and pepper, then top with the peas. Set the dish aside.
  3. In a small saucepan, mix the cold vegetable stock, butter, and flour. Place over heat and bring to a simmer. Gradually stir in the milk and continue heating until hot. Slowly add the torn Swiss cheese pieces, stirring until melted into a smooth, white sauce. Season the sauce with curry powder, salt, and pepper. Pour this sauce evenly over the vegetables in the dish. Cover the dish with aluminium foil.
  4. Place the covered dish in the preheated oven. Bake until the vegetables are cooked through and tender, about 20 minutes. Serve the casserole while it is hot.
