Vegetarian French Onion Soup
This vegetarian version of the classic soup is slow-cooked for deep flavour. Sweet onions are caramelised in butter before being combined with vegetable stock, port wine, and seasonings in a crock pot. It is served with thick slices of French bread topped with melted Gruyère cheese, creating a hearty and satisfying dish perfect for sharing. The recipe yields 7-8 quarts.
Ingredients
- 1/2 cup butter
- 6 cups sweet onions, diced (5-6 medium to lg onions)
- 4 (1 ounce) packages Lipton Onion Soup Mix (or house brand)
- 2 (32 ounce) boxes vegetable stock
- 1 (750 ml) bottle port wine (or any heavy red wine)
- 1/2 cup Worcestershire sauce
- 1 teaspoon black pepper
- 1 tablespoon dried garlic or 3 fresh garlic cloves, minced
- 1 tablespoon italian seasoning
- 1 tablespoon dried parsley
- 1 loaf French bread or 1 loaf Italian bread, thick sliced
- 2 cups grated gruyere cheese
Method
- Melt the butter in a large saute pan, then add the diced onions and cook them until they become caramelised.
- Transfer the caramelised onions to an 8 qt crock pot and add all the remaining ingredients. Set the crock pot to high and allow the mixture to come to a boil, which should take approximately 3 1/2 hours. Afterwards, reduce the heat to low and let it simmer until you are ready to serve.
- For serving, place thick slices of bread on a baking sheet, cover them with the grated Gruyère cheese, and melt the cheese onto the bread. Ladle the soup into individual bowls and top each one with a slice of the cheese-covered bread.
