This quick vegetarian dish transforms frozen broccoli and peppers into a satisfying meal. Using pre-cooked rice, it comes together in a simple stir-fry with beaten egg and a final drizzle of soy sauce. Perfect for a fast dinner or side, it delivers classic egg-fried rice flavours in under a quarter of an hour.

Vegetarian Egg-Fried Rice

Ingredients

  • 1 tbsp sunflower oil
  • 1 tsp garlic purée
  • 140g chopped fresh or frozen peppers
  • handful fresh or frozen broccoli florets
  • 140g cooled, cooked rice
  • 1 egg beaten
  • light soy sauce to drizzle

Method

  1. Warm the sunflower oil in a wok or frying pan. Stir in the garlic purée for a moment. Add the peppers and broccoli florets, cooking them for 3 mins while stirring.
  2. Pour in the cooled, cooked rice and continue to stir-fry the mixture for a further 3-4 mins.
  3. Create a space in the middle of the rice and pour the beaten egg into it. Let it cook for 1 min before mixing it through the rice.
  4. Add seasoning according to your preference. Spoon the fried rice into bowls, finish with a drizzle of light soy sauce, and serve immediately.
