Vegetable Fritters With Caramelised Onions

These golden vegetable fritters combine grated carrot and sweet potato with aromatic spices. They are pan-fried until crisp, then finished in the oven. Each fritter is topped with a dollop of yoghurt, a generous spoonful of slowly cooked caramelised onions, and crumbled feta cheese for a delicious contrast of textures and flavours. Perfect for a quick and satisfying meal.

Vegetable Fritters With Caramelised Onions

Ingredients

  • 300 g carrots, peeled and grated
  • 500 g sweet potatoes, peeled and grated
  • 6 green onions, sliced
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1/4 cup coriander, chopped
  • 100 g cornstarch
  • 3 eggs, lightly beaten
  • salt and pepper
  • vegetable oil, as needed,enough for shallow frying
  • 1/2 cup plain yogurt, to serve
  • 200 g marinated goat-milk feta, drained and crumbled
  • 1/4 cup olive oil
  • 750 g red Spanish onions, thinly sliced

Method

  1. Set your oven to heat to 180C (350F).
  2. To prepare the onions, warm the olive oil in a large pan. Add the sliced onions and cook, stirring now and then, over low heat for 20-30 minutes until they soften and caramelise. Set these aside.
  3. Place the grated carrot and sweet potato into a colander. Squeeze the mixture firmly to remove excess liquid, then tip it into a mixing bowl.
  4. Mix in the sliced green onion, chopped coriander, ground spices, cornstarch and lightly beaten eggs. Season the mixture well with salt and pepper.
  5. Split the combined mixture into eight equal portions. Press each one firmly together to form a patty shape.
  6. Pour a thin layer of vegetable oil into a non-stick frying pan. Cook the fritters in batches until each side is a golden brown colour.
  7. Move the cooked fritters to a lightly oiled baking tray. Bake them in the preheated oven for 10 minutes until they are cooked through.
  8. Arrange the baked fritters on a serving plate. Add a spoonful of plain yoghurt and some of the caramelised onions on top of each, then finish by scattering over the crumbled feta.
