Vaselopita
Vaselopita is a classic Greek cake baked to celebrate New Year's Day. A coin is concealed inside the cake, and the person who discovers it in their slice is said to receive good fortune for the coming year. This version creates a moist, lemony cake topped with slivered almonds and a dusting of icing sugar. It yields one 10-inch round cake, serving about 10 people, and takes around 70 minutes to prepare and bake.
Ingredients
- 1 cup butter, softened
- 2 cups white sugar
- 3 cups all-purpose flour
- 6 eggs
- 2 teaspoons baking powder
- 1 cup milk, lukewarm
- 0.5 teaspoon baking soda
- 3 tablespoons lemon juice
- 0.33333334326744 cup slivered almonds
- 1 tablespoon white sugar
- 2 tablespoons powdered sugar, or as needed
Method
- Set your oven to 350 degrees F (175 degrees C). Thoroughly grease a 10-inch round cake pan.
- Cream the softened butter with 2 cups of sugar in a bowl until pale. Mix in the flour until the texture is crumbly. Incorporate the eggs individually, ensuring each is fully combined before adding the next.
- Dissolve the baking powder into the lukewarm milk and blend this into the flour mixture. Combine the baking soda with lemon juice and fold this into the batter. Transfer the batter to your prepared pan.
- Place the pan in the oven and bake for 20 minutes. Scatter the almonds and 1 tablespoon of white sugar over the top. Continue baking for another 20 to 30 minutes, or until a skewer inserted into the centre emerges clean.
- Take the cake from the oven and carefully make a small incision in its centre. Insert a coin into this opening and conceal it with a little powdered sugar. Let the cake cool on a rack for about 10 minutes. Turn it out onto a plate. Generously sift powdered sugar over the top and enjoy while still warm.
