Vanishing Oatmeal Raisin Cookies
These traditional oatmeal raisin cookies are a beloved treat, ideal for an afternoon snack or packing into a lunchbox. The recipe creates four dozen soft, chewy cookies flavoured with cinnamon, brown sugar, and vanilla. They bake in just 8 to 10 minutes for a golden finish. Ingredients
- 14 tablespoons butter, softened
- 0.75 cup firmly packed brown sugar
- 0.5 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.5 teaspoon salt
- 3 cups Quaker® Oats (Quick or Old Fashioned, uncooked)
- 1 cup raisins
Method
- Preheat your oven to 350 degrees F.
- Using an electric mixer, cream the softened butter with the brown and granulated sugars in a large bowl.
- Beat in the eggs and vanilla extract until the mixture is smooth.
- Incorporate the flour, baking soda, cinnamon, and salt which have been combined beforehand.
- Stir the uncooked oats and the raisins into the cookie dough until evenly distributed.
- Place rounded tablespoonfuls of the dough onto baking sheets that do not require greasing.
- Bake the cookies for 8 to 10 minutes until they turn a light golden brown colour.
- Let the cookies cool on the sheets for 1 minute before transferring them to a wire rack to cool fully. Keep them in a tightly covered container.
