Ultimate Pepper Poppers
These stuffed jalapeños are a fantastic party snack. A rich filling of cream cheese, cheddar, Monterey Jack and crispy bacon is spooned into fresh pepper halves. After a coating of breadcrumbs, they are baked until golden and served warm with a choice of dips. The recipe yields about two dozen poppers, taking roughly 40 minutes from start to finish.
Ingredients
- 1 (8 ounce) package cream cheese
- 1 cup shredded sharp cheddar cheese (4oz.)
- 1 cup shredded monterey jack cheese (4oz.)
- 6 slices bacon, cooked, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1 lb fresh jalapeno, halved lengthwise and seeded
- 1/2 cup dry breadcrumbs
- prepared onion dip (or any combo of the above!) or ranch salad dressing (or any combo of the above!)
Method
- Place the first seven ingredients into a mixing bowl and combine them thoroughly.
- Fill each prepared jalapeño half with approximately two tablespoons of the cheese mixture.
- Coat each stuffed pepper in the dry breadcrumbs and arrange them in a greased 15x10x1 inch baking pan.
- Bake the poppers without a cover in a 350º oven. Leave them for 20 minutes for a spicy result, 30 minutes for medium, or 40 minutes for a milder flavour.
- Offer the baked poppers alongside sour cream, salsa, or your preferred dip or dressing.
- This recipe produces around two dozen pepper poppers.
