Ugly Duckling Pudding Cake
This nostalgic dessert features a moist cake made from a yellow cake mix and lemon pudding, studded with fruit cocktail and coconut. After baking, it's topped with a crunchy layer of brown sugar and nuts, then finished with a warm, buttery coconut glaze. The result is a comforting and flavourful pudding cake, ideal for a crowd. Ingredients
- 1 (18 1/4 ounce) package yellow cake mix
- 1 (3 ounce) package instant lemon pudding mix (4 serving size)
- 1 (16 ounce) can fruit cocktail in heavy syrup
- 1 cup coconut, flaked
- 4 eggs
- 1/4 cup oil
- 1/2 cup brown sugar
- 1/2 cup nuts, chopped
- 1/2 cup butter
- 1/2 cup sugar
- 1 1/3 cups coconut
- 1/2 cup evaporated milk
Method
- Combine all the cake ingredients, leaving out the brown sugar and nuts, and beat with an electric mixer for 4 minutes.
- Transfer the batter to a thoroughly greased 9 x 13 inch baking pan.
- Scatter the brown sugar and chopped nuts evenly over the surface of the batter.
- Place in an oven preheated to 325F and bake for approximately 45 minutes, or until a tester comes out clean. Allow the cake to cool for 15 minutes.
- While the cake cools, prepare the glaze by mixing its ingredients together in a saucepan and bringing them to a boil for 2 minutes.
- Drizzle the hot glaze over the slightly warm cake.
