Ugly Duckling Pudding Cake

Ingredients

  • 1 (18 1/4 ounce) package yellow cake mix
  • 1 (3 ounce) package instant lemon pudding mix (4 serving size)
  • 1 (16 ounce) can fruit cocktail in heavy syrup
  • 1 cup coconut, flaked
  • 4 eggs
  • 1/4 cup oil
  • 1/2 cup brown sugar
  • 1/2 cup nuts, chopped
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 1/3 cups coconut
  • 1/2 cup evaporated milk

Method

  1. Combine all the cake ingredients, leaving out the brown sugar and nuts, and beat with an electric mixer for 4 minutes.
  2. Transfer the batter to a thoroughly greased 9 x 13 inch baking pan.
  3. Scatter the brown sugar and chopped nuts evenly over the surface of the batter.
  4. Place in an oven preheated to 325F and bake for approximately 45 minutes, or until a tester comes out clean. Allow the cake to cool for 15 minutes.
  5. While the cake cools, prepare the glaze by mixing its ingredients together in a saucepan and bringing them to a boil for 2 minutes.
  6. Drizzle the hot glaze over the slightly warm cake.
