Teriyaki Chicken Flatbreads with Two-Ingredient Dough
These savoury flatbreads feature a clever dough made from just self-rising flour and Greek yogurt. Topped with shredded chicken, red onion, and mozzarella in a teriyaki glaze, they bake to a golden finish. Ready in 35 minutes, this recipe yields six servings, ideal for a casual dinner or as a shareable starter.
Ingredients

- 1.5 cups self-rising flour, plus more for kneading
- 1 cup whole-milk plain Greek yogurt
- 2 teaspoons olive oil
- 0.5 medium red onion, thinly sliced
- 1 tablespoon olive oil
- 3 fluid ounces thick teriyaki sauce
- 1 cup cooked and shredded chicken breast meat
- 0.75 cup shredded mozzarella cheese
- 2 teaspoons chopped fresh cilantro
Method
- Set your oven to 425 degrees F (220 degrees C). Prepare a baking sheet by lightly coating it with cooking spray.
- Combine the self-rising flour and Greek yogurt in a bowl. the mixture will appear crumbly. Move it to a floured surface and knead for 5 to 7 minutes until smooth, incorporating extra flour if needed. Divide the dough into two balls.
- Press each ball flat with your hand, stretching it to a thickness of 1/4 inch. You may use a rolling pin if preferred. Form each piece into a long oval shape.
- Place the shaped dough onto the prepared baking sheet. Prick the surface with a fork and brush it with 1 tablespoon of olive oil.
- Bake in the preheated oven for 3 minutes. Take the sheet out but keep the oven switched on.
- While the crust bakes, warm 2 teaspoons of olive oil in a skillet. Cook the sliced red onion for 3 minutes.
- Spread teriyaki sauce over the par-baked crusts, leaving a 1/2-inch border. Layer on the shredded chicken, cooked onions, and mozzarella cheese.
- Bake again until the crust and toppings are nicely browned, which will take 9 to 11 minutes.
- Take the flatbreads from the oven, sprinkle with chopped cilantro, slice, and serve straight away.
