Turkish Stuffed Flatbread (Gozleme)
These Turkish flatbreads, known as gozleme, are a fantastic snack or side dish. A bread machine simplifies making the dough, which is then filled with a savoury mixture of spinach, onion and Parmesan cheese. The stuffed parcels are cooked on a griddle until beautifully golden. The entire process takes about 80 minutes and yields six servings, ideal for a casual dinner.
Ingredients
- 1 cup lukewarm water
- 1 teaspoon butter-flavored shortening
- 0.5 teaspoon salt
- 1 teaspoon white sugar
- 2.3333332538605 cups bread flour
- 1 teaspoon yeast
- 1 tablespoon olive oil
- 1 tablespoon butter
- 0.5 medium onion, chopped
- 0.5 teaspoon salt
- 1.5 cups frozen chopped spinach - thawed, drained, and squeezed dry
- 0.5 teaspoon garlic, minced
- 6 tablespoons grated Parmesan cheese
- 2 tablespoons olive oil, or as needed
Method
- Add the lukewarm water, butter-flavoured shortening, salt, sugar, bread flour and yeast to your bread machine in this sequence. Select the Dough programme. Take the dough out after the kneading phase, which is 20 minutes.
- Separate the dough into 5 equal portions and shape each into a ball. Arrange them on a surface dusted with flour, cover with a cloth that is slightly damp, and allow to rest for 20 to 30 minutes.
- While the dough rests, prepare the filling. Warm the oil and butter in a medium skillet. Cook the chopped onion with salt, stirring often, until softened, about 10 minutes. Mix in the spinach and minced garlic and continue cooking for another 3 to 5 minutes. Take the skillet off the heat.
- Roll each dough ball into a flat circle measuring 5 to 6 inches across. Spoon the spinach filling onto one half of each circle, top with grated Parmesan cheese, then fold the other half over to enclose it. Press the edges firmly to seal.
- Heat a griddle or large frying pan. Lightly brush one side of each gozleme with olive oil and set it oiled-side down on the hot surface. Cook until the underside is golden, 2 to 3 minutes. Brush the top with more oil, flip it over, and cook for a further 2 to 3 minutes until golden.
