Turkish Kofte Sandwich

This sandwich features seasoned beef meatballs, known as kofte, served in Turkish flatbread with a creamy yoghurt and mint dressing. Crisp lettuce, tomatoes and cucumber add freshness. While lamb is traditional, this version uses ground beef for a quick and satisfying meal, perfect for a light lunch or snack. It takes just 30 minutes to prepare.

Turkish Kofte Sandwich

Ingredients

  • 4 ounces ground beef
  • 2 onions
  • 2 garlic cloves
  • salt and pepper
  • parsley or mint
  • 1/2 cucumber
  • olive oil
  • thick yoghurt
  • Turkish bread
  • 2 tomatoes
  • lettuce

Method

  1. Finely chop the onions, one garlic clove and the parsley or mint.
  2. Combine the chopped onions, garlic and herbs with the ground beef, seasoning with salt and pepper.
  3. Use your hands to form the mixture into small meatballs, each about the size of a walnut.
  4. Cook the meatballs either by grilling them or by frying in a pan with a little olive oil.
  5. While the meatballs cook, prepare the dressing by mixing the thick yoghurt with the remaining garlic clove and mint.
  6. Slice the tomatoes and cucumber, and prepare the lettuce leaves.
  7. Cut the Turkish flatbread into four squares, split them open and spread the inside generously with the yoghurt dressing.
  8. Fill each bread square with lettuce, tomato and cucumber slices, add the cooked meatballs and top with an extra spoonful of the yoghurt dressing.
