Turkey and Coriander Burgers with Guacamole
These nutritious burgers are packed with vitamin C, using lean turkey mince seasoned with herbs and topped with a zesty avocado mix. A quick and tasty main course, they are served in toasted ciabatta rolls with peppadew peppers for a satisfying meal that comes together in just half an hour.
Ingredients
- 400g turkey mince
- 1 tsp Worcestershire sauce
- 85g fresh breadcrumb
- 1 tbsp chopped coriander
- 1 red onion finely chopped
- 1 large ripe avocado or 2 small
- 1 chilli deseeded and finely chopped
- juice 1 lime
- 4 ciabatta rolls, cut in half
- 1 tsp sunflower oil
- 8 hot peppadew peppers, roughly chopped
Method
- Combine the turkey mince, Worcestershire sauce, breadcrumbs, half of the coriander and half of the red onion with seasoning. Shape this mixture into four patties and place them in the fridge to chill.
- For the guacamole, mash the ripe avocado with the rest of the coriander and onion, the chopped chilli and the lime juice, then season to your taste.
- Get a griddle pan or barbecue hot. Toast the ciabatta roll halves, cut side down, for 1 min and set them aside. Lightly brush the burgers with sunflower oil. Cook the burgers for 7-8 mins on each side until they are charred and fully cooked. Assemble the rolls with the burgers, guacamole and chopped peppadew peppers.
