Tuna Steaks with Cucumber Relish

Ingredients

  • 3 tbsp olive oil
  • 4 tuna steaks about 140g/5oz each
  • 1/2 cucumber
  • 2 spring onions finely chopped
  • 1 medium tomato finely chopped
  • 1/2 large red chilli seeded and finely chopped
  • 1tbsp olive oil
  • 2tbsp chopped parsley
  • 1tbsp lime or lemon juice

Method

  1. Place the 3 tbsp olive oil into a food bag with the tuna steaks. Coat them thoroughly and set aside for 30 mins to marinate while preparing the relish. Peel the cucumber, cut it in half lengthways and remove the seeds. Dice the flesh finely. Combine it with the spring onions, tomato, red chilli, 1tbsp olive oil, parsley and lime or lemon juice. Season and set the mixture aside.
  2. For griddling, get your pan very hot. Cook the tuna steaks for 2 mins, then turn them over. Cook for another 2 mins on the other side, adjusting for steak thickness. Tuna is best when still slightly pink inside. Take the steaks off the heat and let them rest for 3-5 mins. Finally, top each steak with a generous spoonful of the prepared relish before serving.
