Tri-Colour Broccoli and Pepperoni Pasta Salad

Ingredients

  • 1 lb tri-colored pasta
  • 1 cup cheddar cheese, cubed
  • 1/2 cup Italian dressing (to taste)
  • salt & pepper
  • 1 -2 1/2 ounce sliced black olives
  • 1/2 cup diced pepperoni
  • 1 cup chopped broccoli

Method

  1. Cook the pasta in boiling water, adding the chopped broccoli for the final few minutes of the cooking time.
  2. Drain the cooked pasta and broccoli thoroughly.
  3. Transfer the drained pasta and broccoli to a mixing bowl and combine with all the remaining ingredients except for the cubed cheddar cheese.
  4. Scatter the cubed cheddar cheese over the top of the pasta salad. You can chill the salad before serving if you prefer.
