Tostones (Green Plantain Chips)
These vegan tostones are made from green plantains, fried twice for a wonderfully crisp texture. After an initial boil to loosen the skin, the plantain slices are fried, flattened, and fried again until golden. They are then seasoned simply with garlic powder and salt for a classic, savoury flavour. This recipe serves four and is ready in just 20 minutes.
Ingredients
- 2 large green plantains
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 240ml peanut oil
Method
- Remove the tips from each plantain. Make a lengthwise cut along both sides of each one and place them in a bowl. Pour boiling water over them to cover and leave for 10 minutes. Peel the plantains with a sharp knife and cut them into 1/2inch slices.
- Warm the peanut oil in a large frying pan until it shimmers. Fry the plantain slices for 10 minutes. Take them from the oil, keeping the oil for later, and arrange them in a single layer on a tea towel or paper towels. Turn them to blot away oil. Press down firmly on each slice using bunched-up paper towels or another tea towel. Reheat the reserved oil to 190 degrees and fry the plantains a second time until they are crisp and golden. Finish by sprinkling with garlic powder and salt.
