This sweet and savoury homemade jam is a fantastic way to use ripe summer tomatoes. Combining smoked bacon with tomatoes, onion, sugar and vinegar creates a rich, thick spread that is incredibly versatile. It makes a delicious appetiser or snack. The recipe yields enough for about ten servings and requires just over two hours to prepare and cook. Once made, it stores well in the fridge or freezer for future use.

Tomato and Bacon Jam

Ingredients

  • 0.5 pound smoked bacon
  • 2 pounds ripe tomatoes, chopped
  • 1 yellow sweet onion, finely diced
  • 1 cup white sugar
  • 2.5 tablespoons apple cider vinegar
  • 1.5 teaspoons salt
  • 0.25 teaspoon black pepper
  • 1 dash hot pepper sauce (such as Tabasco®)

Method

  1. Place the bacon in a large skillet and cook, turning it now and then, until it is browned all over. This should take about 10 minutes. Transfer the cooked bacon to paper towels to drain, then crumble it once it has cooled.
  2. Combine the chopped tomatoes, diced sweet onion, white sugar, apple cider vinegar, salt, black pepper and hot pepper sauce in a saucepan. Bring the mixture to a boil while stirring constantly to ensure the sugar dissolves. Mix in the crumbled bacon, then continue to cook, stirring frequently, until the spread becomes very thick, which will take about 1 hour. Taste and adjust the seasoning with more salt and black pepper if needed.
  3. Allow the spread to cool completely. Then, spoon it into a clean 1-pint glass jar that has a lid. You can keep it in the refrigerator for up to 1 week. For longer storage, freeze it in smaller jars. it will keep frozen for 2 months. When ready to use a frozen jar, thaw it overnight in the refrigerator.
