Tofu With Cilantro Sauce

This light entree or side dish features firm tofu simmered in salted water, then topped with a vibrant sauce of fresh cilantro, ginger, soy sauce and brown sugar. The sauce is quickly stir fried to create a punchy, aromatic flavour. It is a simple yet flavourful plant based option that pairs wonderfully with brown rice and steamed vegetables for a complete meal.

Tofu With Cilantro Sauce

Ingredients

  • 1 lb firm tofu
  • 1 tablespoon salt
  • 2 tablespoons canola oil
  • 2 tablespoons finely chopped fresh gingerroot
  • 1 cup chopped fresh cilantro
  • 2 tablespoons soy sauce
  • 2 teaspoons light brown sugar

Method

  1. Slice the tofu into four thick pieces. Place them in a pot with 3 cups of cold water and the tablespoon of salt. Allow to soak for 30 minutes, then gradually heat the water until it is almost boiling. Cook for 5 minutes without letting it boil.
  2. As the tofu cooks, make the sauce. Warm the canola oil in a skillet and stir in the chopped ginger. Stir fry for 1 minute before adding the cilantro, soy sauce and brown sugar. Cook this mixture for 1 minute.
  3. Take the tofu off the heat and drain the water. Gently move the tofu slices to a warmed serving plate and pour the prepared sauce over the top.
  4. For serving, consider brown rice and steamed vegetables.
