Thunder Bay Oven Fried Chicken
This cherished family recipe originates from a Thunder Bay community book. It features chicken pieces coated in seasoned flour, browned, then baked atop a savoury bread cube dressing. The dish is finished with a creamy gravy made from soup and baked until tender. It yields a complete, comforting meal for four people.
Ingredients
- 4 lbs chicken pieces or 4 lbs chicken breasts
- 6 cups dry bread cubes (diced bread)
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/4 teaspoons sage
- 2 tablespoons oil, vegetable
- 4 tablespoons onions, chopped
- 1/2 cup margarine, melted
- 1 (10 ounce) can cream of chicken soup
- 2 tablespoons flour
- 1 1/4 cups water, cold
Method
- Combine the salt, pepper, sage and 1/2 cup of flour in a bowl.
- Coat the chicken pieces by dipping them into the seasoned flour mixture.
- Cook the chicken in hot oil until browned on all sides.
- For the dressing, mix the dry bread cubes, chopped onion, melted margarine and half of the soup together until bound.
- Spread the prepared bread dressing across the base of a roasting pan.
- Arrange the browned chicken pieces on top of the dressing layer.
- Blend 2 tablespoons of flour with the remaining half can of chicken soup, then stir in 1 1/4 cups of cold water to create a gravy.
- Pour the prepared gravy mixture over the chicken and dressing in the pan.
- Cover the pan tightly and bake at 350 degrees for 1 hour.
- This dish pairs well with sides like mashed potatoes, carrots, yellow beans and peas.
