Thunder Bay Oven Fried Chicken

Ingredients

  • 4 lbs chicken pieces or 4 lbs chicken breasts
  • 6 cups dry bread cubes (diced bread)
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/4 teaspoons sage
  • 2 tablespoons oil, vegetable
  • 4 tablespoons onions, chopped
  • 1/2 cup margarine, melted
  • 1 (10 ounce) can cream of chicken soup
  • 2 tablespoons flour
  • 1 1/4 cups water, cold

Method

  1. Combine the salt, pepper, sage and 1/2 cup of flour in a bowl.
  2. Coat the chicken pieces by dipping them into the seasoned flour mixture.
  3. Cook the chicken in hot oil until browned on all sides.
  4. For the dressing, mix the dry bread cubes, chopped onion, melted margarine and half of the soup together until bound.
  5. Spread the prepared bread dressing across the base of a roasting pan.
  6. Arrange the browned chicken pieces on top of the dressing layer.
  7. Blend 2 tablespoons of flour with the remaining half can of chicken soup, then stir in 1 1/4 cups of cold water to create a gravy.
  8. Pour the prepared gravy mixture over the chicken and dressing in the pan.
  9. Cover the pan tightly and bake at 350 degrees for 1 hour.
  10. This dish pairs well with sides like mashed potatoes, carrots, yellow beans and peas.
