Three Cheese Spinach Pie

Ingredients

  • 1 1/2 cups Minute Rice
  • 1 1/2 cups boiling water
  • 1 teaspoon salt
  • 1/2 cup mozzarella cheese
  • 1 egg, beaten
  • 10 ounces frozen spinach or 10 ounces fresh spinach, cooked and drained
  • 3 eggs
  • 1 cup grated feta cheese
  • 2 -3 tablespoons chopped onions, sauteed
  • 1 tomatoes, sliced
  • 2 tablespoons parmesan cheese

Method

  1. Put the rice and boiling water into a 9-inch plate.
  2. Cover the plate and leave it to stand for 5 minutes.
  3. Mix in the salt, mozzarella cheese and beaten egg, then use a spoon to press the mixture into the shape of a pie shell.
  4. In a separate bowl, combine the drained spinach, feta cheese, sauteed onions and the 3 eggs.
  5. Stir this filling mixture until it is thoroughly combined.
  6. Transfer the spinach and cheese mixture into the prepared rice shell.
  7. Arrange the tomato slices on top and finish with a sprinkle of parmesan cheese.
  8. Bake the pie at 400 degrees for 45-60 minutes, as oven temperatures can vary.
  9. Alternatively, you can microwave the pie on HIGH for 10 minutes and then allow it to stand for 3 minutes before serving.
