Three Cheese Spinach Pie
This gluten-free savoury pie features a unique crust made from Minute Rice. The filling combines spinach with three cheeses: feta, mozzarella and parmesan. It is a versatile dish, ideal for brunch or as a light main course. The recipe offers both conventional oven and microwave cooking methods for convenience. It serves six people and takes about 60 minutes to prepare and cook.
Ingredients
- 1 1/2 cups Minute Rice
- 1 1/2 cups boiling water
- 1 teaspoon salt
- 1/2 cup mozzarella cheese
- 1 egg, beaten
- 10 ounces frozen spinach or 10 ounces fresh spinach, cooked and drained
- 3 eggs
- 1 cup grated feta cheese
- 2 -3 tablespoons chopped onions, sauteed
- 1 tomatoes, sliced
- 2 tablespoons parmesan cheese
Method
- Put the rice and boiling water into a 9-inch plate.
- Cover the plate and leave it to stand for 5 minutes.
- Mix in the salt, mozzarella cheese and beaten egg, then use a spoon to press the mixture into the shape of a pie shell.
- In a separate bowl, combine the drained spinach, feta cheese, sauteed onions and the 3 eggs.
- Stir this filling mixture until it is thoroughly combined.
- Transfer the spinach and cheese mixture into the prepared rice shell.
- Arrange the tomato slices on top and finish with a sprinkle of parmesan cheese.
- Bake the pie at 400 degrees for 45-60 minutes, as oven temperatures can vary.
- Alternatively, you can microwave the pie on HIGH for 10 minutes and then allow it to stand for 3 minutes before serving.
