This warm spinach salad combines crispy bacon strips with sweet caramelised onion and garlic. A dressing of honey and apple cider vinegar coats the leaves, which are wilted just before serving. The dish is finished with halved soft boiled eggs and a generous sprinkle of black pepper for a satisfying mix of textures and flavours, all prepared in a single pan.

The Ultimate Spinach Salad With Bacon, Black Pepper, and Honey

Ingredients

  • 2 large eggs
  • 2 bacon, slices cut crosswise into thin strips
  • 1 onion, sliced
  • 2 garlic cloves, sliced
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 (1 lb) bag Baby Spinach
  • kosher salt & freshly ground black pepper

Method

  1. Place the eggs in a small saucepan and cover them with cold water. Bring the water to a simmer, then turn off the heat. Allow the eggs to sit in the hot water for 12 minutes. Remove the eggs, cool them, then peel.
  2. While the eggs cook, place the bacon strips in a large skillet. Cook them for 3 to 4 minutes to render the fat. Transfer the cooked bacon to a plate, leaving the fat in the pan.
  3. Add the sliced onion and garlic to the skillet with the bacon fat. Cook for 5-6 minutes until they become soft.
  4. Stir in the honey and apple cider vinegar. Continue cooking for about 5 more minutes until the onion caramelises.
  5. Add the bag of baby spinach to the skillet. Sprinkle with kosher salt and freshly ground black pepper. Use tongs to toss everything together until the spinach just wilts, which should take about 30 seconds.
  6. Transfer the spinach mixture to a serving bowl. Mix in the reserved bacon. Halve the peeled eggs and arrange them on top of the salad.
