Ingredients

  • 1 lb lean ground beef
  • salt and pepper
  • 3 (15 ounce) cans dark red kidney beans
  • 3 (14 1/2 ounce) cans Mexican-style stewed tomatoes
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 dash Worcestershire sauce
  • 1/2 cup red wine

Method

  1. Cook the ground beef in a large skillet until it is browned all over.
  2. Drain the fat from the beef and add salt and pepper as desired.
  3. Transfer the cooked beef to a slow cooker and add the kidney beans, tomatoes, celery, red bell pepper and red wine vinegar.
  4. Add the chilli powder, cumin, dried parsley, dried basil and Worcestershire sauce to the mixture.
  5. Give everything a good stir to combine the ingredients thoroughly.
  6. Set the slow cooker to High for 6 hours or to Low for 8 hours.
  7. Pour the red wine into the chilli for the final 2 hours of the cooking time.
