The Ultimate Chili
This ultimate chilli is a hearty one dish meal, perfect for feeding a crowd. Lean ground beef is browned and then slow-cooked for hours with dark red kidney beans, Mexican-style stewed tomatoes, celery and red bell pepper. The flavour is built with red wine vinegar, chilli powder, cumin and herbs, with a final addition of red wine for depth. It yields six generous servings and requires a total time of 370 minutes to develop its full, rich taste.
Ingredients
- 1 lb lean ground beef
- salt and pepper
- 3 (15 ounce) cans dark red kidney beans
- 3 (14 1/2 ounce) cans Mexican-style stewed tomatoes
- 2 stalks celery, chopped
- 1 red bell pepper, chopped
- 1/4 cup red wine vinegar
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 dash Worcestershire sauce
- 1/2 cup red wine
Method
- Cook the ground beef in a large skillet until it is browned all over.
- Drain the fat from the beef and add salt and pepper as desired.
- Transfer the cooked beef to a slow cooker and add the kidney beans, tomatoes, celery, red bell pepper and red wine vinegar.
- Add the chilli powder, cumin, dried parsley, dried basil and Worcestershire sauce to the mixture.
- Give everything a good stir to combine the ingredients thoroughly.
- Set the slow cooker to High for 6 hours or to Low for 8 hours.
- Pour the red wine into the chilli for the final 2 hours of the cooking time.
