This recipe combines a bounty of garden peppers with Thai basil for a delicious family meal. Thai Stuffed Poblano or Green Bell Peppers

Ingredients

  • 1 1/2 lbs ground turkey
  • 1 large onion, chopped fine
  • 6 garlic cloves, minced
  • 2 tablespoons sesame oil
  • 1/2 cup packed Thai basil, chopped
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1 tablespoon fish sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon red pepper flakes (optional)
  • 3 cups cooked white rice
  • 6 -8 pablano bell peppers or 6 -8 green peppers

Method

  1. Heat the sesame oil in a large skillet, then add the ground turkey, chopped onion, and minced garlic. Cook until the turkey is browned, breaking up the meat as it cooks.
  2. Prepare the sauce by whisking together the soy sauce, water, fish sauce, hoisin sauce, brown sugar, and cornstarch in a separate bowl until smooth.
  3. Pour the sauce into the skillet with the cooked meat. Add the red pepper flakes and chopped Thai basil, stirring everything to combine.
  4. Allow the mixture to simmer for 10-15 minutes. Mix in the cooked white rice, then take the skillet off the heat and let the filling cool. You can refrigerate it overnight if preferred.
  5. Heat your oven to 350°F.
  6. Slice the tops from the peppers and remove the seeds and inner veins as thoroughly as you can.
  7. Fill each pepper with the meat and rice mixture. Place the stuffed peppers in a greased 9X13 baking dish, pour 2/3 cup water into the dish, cover, and bake for 45 minutes to 1 hr. They are ready when a fork pierces the pepper flesh easily.
